தேன் ....தேன்...தேன்




தேன் என்பது :


 தேன் என்பது குளுகோஸ், புரக்டோஸ், நீர், மற்றும் சில என்ஸைம்கள் சிலவகை எண்ணெய்கள் ஆகியவை அடங்கியதாகும். 


இவை மலரிருந்து கொண்டு வரும் குளுகோஸ் 40 சதவிகிதம் முதல் 80 சதவிகிதம் வரை நீர் நிறைந்ததாக இருக்கும். 


ஆனால் இவை உற்பத்தி செய்யும் தேனில் 16 முதல் 18 சதவிகிதமே நீர் இருக்கும். இவற்றின் நிறம் மற்றும் சுவை தேனீக்களின் வயது மற்றும் அந்த பகுதியில் அமைந்திருக்கும் தாவர வகைகளைப் பொறுத்து மாறுபட்டு இருக்கும்.


 கொம்புத்தேன், மலைத்தேன், குறிஞ்சித்தேன் என்று தேனில் அறுபது வகை உண்டு.


 ஒவ்வொரு வகைத் தேனுக்கும் ஒவ்வொரு சிறப்பு குணம் உண்டு




தேனின் நிறம் :


 பொதுவாக தேன் மஞ்சள் நிறமுடையதாய் இருக்கும். வெளிர் மஞ்சள் நிற தேன் தரம் வாய்ந்ததாய் இருக்கும். ஆரஞ்சு மரத்தின் பூக்களைக் கொண்டு தேனீக்களினால் உருவாக்கப்படும் தேன் முதல் தரமானதாகக் கருதப்படுகின்றது.


தேனில் ஈரத்தன்மை :


தேனில் 14% - 18% ஈரத்தன்மை உள்ளது. 18%க்கு கீழே ஈரத்தன்மை உள்ள வரை தேனில் நுண்ணுயிர்கள் (கிருமிகள்) வளர இயலாது.

கண்பார்வை சிறக்க :


தேனுடன் வெங்காயச்சாறு கலந்து சாப்பிட்டால் கண்பார்வை பிரகாசம் அடையும்.

நுரையீரல் சுவாச தொல்லைகளுக்கு :

 பார்லிக் கஞ்சியை வடிகட்டி அதில் தேன் கலந்து சாப்பிட, இருமல் மட்டுப்படும். சளித் தொல்லை குறையும்.


 தேனை துளசிச் சாற்றில் கலந்து உபயோகிப்பது சளி, தொண்டை வீக்கம், பிராங்டீஸ் எனப்படும் சுவாசத் தொல்லை போன்றவைகளுக்கு மிகவும் நல்லது.

உடல் மெலிய :

உடல் ஆரோக்கியத்திற்கு தேன் வழி வகுக்கும், தேனும் வெந்நீரும் கலந்து அருந்தினால் பருத்த உடல், மெலியும், ஊளைச் சதை குறையும் உடல் உறுதி அடையும்.

 ஆஸ்துமா  , அலர்ஜி உபாதைக்கு :


தேனும், முட்டையும், பாலும் கலந்து சாப்பிட்டுவந்தால் ஆஸ்துமா உபாதையிலிருந்து தப்பலாம்.

ஆஸ்துமா, அலர்ஜி தொல்லைகளிலிருந்து விடுபட தினமும் தேனைப் பருகி வரவேண்டும்.

வாந்தி, குமட்டல் ஜலதோஷம், தலை வலி :


தேனுடன் எலுமிச்சம் பழச்சாறு கலந்து அருந்தினால் வாந்தி, குமட்டல் ஜலதோஷம், தலை வலி குணமாகும்.


 இருதய நோய்கள் :


தேனையும் மாதுளம் பழ ரசத்தையும் சம அளவு சேர்த்துத் தினமும் சாப்பிட்டால் இருதய நோய்கள் தீரும்.

சோகை நோய்க்கு:


உடம்பில் இரத்தக் குறைவு அல்லது சோகை நோய் இருந்தால் தேனும், பாலும் சாப்பிட்டு வந்தால் சோகை நோய் நீங்கும்.

பழுக்காத கட்டிகள் , ஆறாத புண்கள் :


தேனுடன் சுண்ணாம்பைக் கலந்து, நன்றாகக் குழைத்து பழுக்காத கட்டிகள் மேல் பூச கட்டிகள் பழுக்கும்.

மீன் எண்ணெயோடு தேனைக் கலந்து உண்டு வந்தால், ஆறாத புண்கள் ஆறிவிடும்.

 கீழ் வாதம் :

கருஞ்சீரகத்தை நீர் விட்டுக்காய்ச்சி அதில் தேன் கலந்து சாப்பிட, கீழ் வாதம் போகும்.

வயிற்றுவலி:

வயிற்றுவலி ஏற்பட்டவர்களுக்குத் தொப்புளைச் சுற்றிலும் தேன் தடவினால் வலி நீங்கும்.

 பித்த நீர்த் தொந்தரவுகள் :

தேனோடு பாலோ, எலுமிச்சம் பழச்சாறோ கலந்து சாப்பிட பித்த நீர்த் தொந்தரவுகள் குறையும். கல்லீரல் வலுவடையும்.

இரத்த விருத்தி :


அரை அவுன்ஸ் தேனுடன், அரை அவுன்ஸ் இஞ்சிச்சாறு கலந்து காலை நேரங்களில் தொடர்ந்து சாப்பிட்டு வர, இரத்த சுத்தியும், இரத்த விருத்தியும் ஏற்படும். நரம்புத் தளர்ச்சிகளும் நீங்கும்.

அல்சர்:


அல்சர் நோய்க்கு சாப்பாட்டிற்கு முன் இரண்டு கரண்டித் தேனைத் தொடர்ந்து சாப்பிட்டு வர, குணமாகும்.

நீர்க்கோவை :

முருங்கைக்காய்ச் சாறுடன் சமளவு தேன் கலந்து பருகினால் நீர்க்கோவை நீங்கும்.



ஒரு டம்ளர் வெந்நீரில் ஒரு டீஸ்பூன் தேன் கலந்து, பின்பு அதில் அரை எலுமிச்சம்பழச் சாற்றையும் சேர்த்துச் சாப்பிட்டு வந்தால் உடல் எப்பொழுதும் சுறுசுறுப்பாக இருக்கும்.நுரையீரலில் சேர்ந்துள்ள சளி எல்லாம் கண் காணாத இடத்திற்கு ஓடிவிடும். குடல் மற்றும் வயிற்றுக் கோளாறுகள் நீங்கிவிடும். குளிர்ச்சியால் ஏற்படும் எல்லா வியாதிகளையும் உடல் எதிர்த்து நின்று தடுத்துவிடும். இதய பாதிப்புகள் நீங்கி இதயம் பலம் பெறும். புதிய இரத்தம் உடம்பில் பாய்ந்தோடும்.

அதிகாலையிலும், படுக்கச் செல்வதற்கு முன்பும் பருகவேண்டும்.
நெல்லிக்காய்களைத் துண்டு துண்டாக்கி தேன், ஏலக்காய், ரோஜா இதழ்கள் சேர்த்து இரண்டு நாட்கள் வெயிலில் காய வைக்கவேண்டும். பின்பு ஒரு ஸ்பூன் வீதம் காலையும், மாலையும் சாப்பிட்டு வந்தால் வறட்டு இருமல் குணமாகிவிடும்.

என்றும் இளமையுடன் இருக்க வேண்டு-மென விரும்புவோர் தினமும் தேனை அருந்தவேண்டும். நாற்பது வயதைக் கடந்தவர்கள் கண்டிப்பாகத் தினமும் தேனை அருந்திவர வேண்டும்.

சிறந்த மருத்துவரும், மாபெரும் சிந்தனையாளருமான ஹிப்போ கிரேட்ஸ் 107 வயது வரை நோய் நொடியின்றி, திடகாத்திரமாக புலன்கள் பலம் நிறைந்தவராக வாழ்ந்தார். இதற்குக் காரணம் தேன்தான். ``ஒவ்வொரு நேரமும், உணவு உண்ணும்போது தேனையும் சேர்த்து உண்டு வந்தேன்'' என்று கூறினார் அவர்.

நாம் உண்ணும் உணவுகள் இரைப்பையில் சென்று சேருகிறது. அங்கு ஜீரண உறுப்புகளெல்லாம் ஒன்று சேர்ந்து உணவை ஜீரணித்து பலவித சத்துக்களைத் தனித்தனியாகப் பிரித்து, பின்பு உடல் முழுவதும் அனுப்புகின்றன.

இந்தப் பணியினை இரைப்பை மிகச் சிறப்பாகச் செய்கிறது. இந்த இரைப்பையின் பணி சீராக நடப்பதற்கு தேன் மிகவும் உதவுகிறது. ஜீரணச் சத்து குறைந்திருந்-தால் ஒரு டம்ளர் பாலில் ஒரு ஸ்பூன் தேன் கலந்து சாப்பிட்டால் ஜீரண உறுப்புகள் பலம் பெற்றுவிடும். இரைப்பையின் பணி கெட்டுவிட்டால் உடம்பு அவ்வளவுதான்.

ஒரு ஸ்பூன் தேனைச் சாப்பிட்டு வந்தால் அரை மணி நேரத்தில் நரம்புகள் சுறுசுறுப்புடன் திகழும். சிலருக்குக் கை, கால்கள், விரல்கள் மற்றும் உடல் நடுங்க ஆரம்பிக்கும். இவர்கள் தினமும் ஒரு டம்ளர் பாலில் ஒரு ஸ்பூன் தேன் கலந்து சாப்பிட்டு வந்தால் நிச்சயம் குணம் காண்பார்கள்.

மூட்டு வலிகளுக்குச் சிறந்த மருந்து தேன்தான். வலி உள்ள இடத்தில் நன்றாகத் தேனைத் தேய்த்துவிட வேண்டும். அத்துடன் எப்பொழுது உணவு உட்கொண்டாலும் ஒரு ஸ்பூன் தேனையும் உடனே உட்கொள்ள வேண்டும். மூட்டுகள் தேயாது, மூட்டுகள் வலிக்காது.

படுக்கையே கதியாகக் கொண்டிருக்கும் பிணியாளர்கள், பாலில் கொஞ்சம் தேன் கலந்து தவறாமல் குடித்து வந்தால், விரைவில் தெம்பு ஏற்பட்டு சுறுசுறுப்புடன் செயல்படத் தொடங்கிவிடுவார்கள்
.

நமது உடலுக்கு கார்போஹைட்ரேட் சக்திகளை அளித்து, நமக்குத் தேவையான சக்தியைத் தருகிறது. பிற உணவுகளைப் போல வயிற்றில் தங்கிப் புளிக்கும் அபாயமோ, ஜீரணக் கோளாறோ எல்லாம் இதில் இல்லை. இதில் இரும்பு, தாமிரம், மங்கனீசு, பொட்டாசியம் போன்ற சத்துக்கள் உள்ளதால் நல்ல இரத்த விருத்தி ஏற்படும்.

சோர்வுற்றநிலை, அதிக வேலை, பசியின்மை, அதிக அமிலத்தன்மை, பித்தம் சம்பந்தமான தொல்லைகள், இரத்தக்குழாய் தொடர்பான சில தொல்லைகள், இருதயத் தசைகளுக்குப் போதுமான இரத்தம் இன்மையால் ஏற்படும் வலி, தொற்று நோய்க் கிருமிகளால் உண்டான காய்ச்சல், மூளைக்கு அதிக வேலை கொடுத்ததால் ஏற்பட்ட சோர்வு, கர்ப்பிணிகளுக்கு ஏற்படும் காலை நேரத் தொல்லைகள், ஹைபோகிளை சீமியா எனப்படும் இரத்தத்தில் சர்க்கரைச் சத்து குறைந்த நிலை போன்றவைகளுக்குத் தேன் மிகுந்த பயனுள்ளது.

ஒரு மேசைக்கரண்டி தேனை இரவில் படுக்கும்போது உண்டு. வந்தால் அடிக்கடி சிறுநீர் கழிக்கும் நிலை மாறும். நரம்புத் தளர்ச்சிக்குத் தேனைவிடச் சிறந்த மருந்து இல்லை.

இதனைத் தவறாது உபயோகித்தால் சக்தி அதிகரிக்கும். சோர்வு ஏற்பட்டாலும் உடல் தாங்கும் தன்மை பெறும். உடல் ஆரோக்கியத்திற்கு தேன் வழி வகுக்கும் என்பதில் ஐயமில்லை.

busts diet myths and tells you just what you should do to stay fit and healthy.
Unpronouncable names, tall claims, exotic looks, tastes like cardboard, advertised for weight loss and super expensive… any guesses what we're are talking about?
 Well, these are diet foods
. Normally fitness and weight loss diets come with fewer do's and many don'ts.
There are a few ground rules that must be kept in mind to stay healthy.
 A fit person is one who will manage to lose weight and stay toned.
 The main ingredients that form a wholesome meal are rice providing the carbs, dal providing the protients and vegetables, coconut and groundnut, filtered oil providing the other essesential nutrients. 
This is what makes the complete meal. Rujuta Diwekar's workshop in Chennai was an extensive session to help people eat right. These are her tips that can change your lifestyle and the way you look.
Eat local food (Eat what is grown in your State and surroundings). 
The further the food comes from the further your navel will be from your spine
Avoid storing, eating, reheating and plastic.
 Plastic has a compound similar to estrogen.
 So the more food is in contact with plastic the more the chances of a hormonal imbalance resulting in PCOD and PCOS.
The amount you should eat is a question that should be only answered by you. Establish a rapport with your stomach and try as far as possible to eat in silence so that you can hear your stomach tell you to stop.
Always make sure you sleep at the same time every day.
Follow an exercise that you can not only enjoy but will want to pursue for the next 15 years. Make sure to improvise and stay consistent.
Change your attitude and respect your body.
Never count calories. Always count the nourishment it provides.
Fruits have fructose that are necessary for the body. Any fruit can give you that. Make sure to consume seasonal fruits. For example it's the season to have custard apple. With its other properties it can help you combat monsoons, boosts the immunity system has fibre iron and B6 needed for a flat stomach.
Give yourself a sweet visa to avoid cravings and then bingeing.
Use filtered oil in as it the one which retains the necessary nutrients.
Rice
Rice is a must-have. Grown regionally, eat rice as it has Methionine needed for lustrous hair. If you are dieting and cutting out rice, you will notice how the diet leads to hairfall. Always check for rice in which you can see a couple of red lines. That's the rice you should be eating.
Ghee
Always add ghee in your food. Ghee or clarified butter increases the immunity needed in a body. It should be an integral part of your diet as it increases the flexibility needed for bones. It is also an important anti ageing agent. Make it at home to avoid impurities.
Coconut
Coconut is wholesome. Every part of it can be used. Coconut has anti fungal and anti viral properties that are useful for the body.
Groundnuts
Groundnuts has anti oxidants which very few plants have and it's called reservetol. It has properties that can burn the stubborn fat in your bodies. Eating some peanuts will keep the heart healthy. It helps you mobilise the fat deposited areas that need to be worked on.

Manu Chandra, a panellist at The Hindu Lit for Life conclave 
in Delhi today, on what it takes to make a great chef.
Good food is both a passion as well as a business for chef Manu Chandra. 

Starting off at a very young age, Chandra is now an Executive Chef at three restaurants over two cities: Olive Bar and Kitchen, Mumbai, and Olive Beach, Bangalore.

 Armed with top honours from the Culinary Institute of America and apprenticeships with some of America's most celebrated chefs and kitchens, 

Chandra has introduced newer concepts, menus and kitchen designs in his restaurants in India.

 At 28, Chandra is one of the youngest chefs in the country and is constantly moving from strength to strength, as his recipes are tested and loved by everyone who samples them.

 His restaurants have already gained the reputation of offering a relaxed and comfortable fine dining experience supplemented by sumptuous meals.

 All set to make his appearance at the Hindu Lit for Life Fest, 2011, Chandra shares a little of what makes him a great chef.

When did you start cooking? Do you remember what dish or experience made you start?

I started cooking when I was about 10 or 12 years old, and probably started with Maggi noodles. However I always had to do something to it to make it taste better. It was making kababs with my Dadi and the painstaking processes involved in its prep that made me fall in love with the technique and nuances of good food. 

What were the challenges you faced?

Limited resistance to the idea of taking it up professionally, but that was short lived. On the contrary, almost everyone supported my passion whole heartedly. 

What do you enjoy most about cooking?

The high you get from appreciative diners and the creation of new sensory experiences.

Have there been any great and lasting inspirations along the way?

Some kitchens in the west. Focused, professional, diligent and dead serious about what they do. They are, in a large part, responsible for the food ethos of many cities and countries. 

What have your years as a chef taught you about the Indian palate? What do people want? Is there room for experiments?

That we are sitting on huge untapped potential; and the leap of faith from the home table to a restaurant is a work in progress. We have an incredible food culture but the restaurant culture is very new. When people start venturing out more often, their closeted palates will change too. There is always room for experimentation; thankfully our strength in numbers supports it. 

What, according to you, makes a great chef?

A streak of madness. I could go on about diligence, hard work, sacrifice; but mad captures it better, I feel. 

Plans for the future? Anything new and exciting we can expect?

It's a work in progress. Chefs in the west have made giant leaps in becoming very successful business heads and brands unto themselves; that will be the next exciting thing here; and I will hopefully be in the lead with the pack.

A chance to experience the real taste of Arabian cuisine at  Le Meridien- Kochi


The news is that Arab tourists are flocking to see Kerala's lush greenery. In most of the hotels and resorts one comes across tourists from West Asia, smitten by the rain, by the fresh vegetables that they get to eat and experiencing the rich cultural life of our State.
It is only in the scheme of things that Le Méridien come out with a food festival highlighting Arabian food.
‘Aroma of Arabia', that's the name given to
 the festival which began on October 1 and will run till October 9,
 at the Treasure Trove Restaurant there. It's on from 7 to 11 pm.

MANY SPECIALITIES

The Arabian cuisine you find here at the festival includes specialities from Egypt, Lebanon, Morocco, Algeria, and Syria too. The interactive kitchens are alive with the rich aroma of lamb and chicken, says Soman Thapasimuthu, Executive Chef, Le Méridien Kochi. Chef Rehman, who is specially trained in Arabian cuisine has seen to it that Kochiites have a real taste of Arabia.
The décor is also very Arabian. It's not all non vegetarian as you would imagine. There are veggies too.
We had Dajaj Makloube, which is chicken and rice and has the looks of a biriyani. It's not as spicy as our own kind, but the rich topping of cashew, onions, potatoes and the chicken fried yet soft deep inside, will appeal to the Kerala tastebuds. If you want something totally different from Kerala cuisine, go in for Mansif Jordan lamb stew.
It's not a stew only, but a meal by itself, with lamb and traditional Arabic rice cooked in pure milk (not coconut, mind you) and yoghurt. Dried fruits like apricot, strawberries are also added.
No, the Arabic world hardly ever uses chillies, says Rehman, a chef who has worked in Saudi Arabia for many years. “They use only seven spices, and not ginger and other spices we use here,” he says.
The mixed vegetable lasagne of the Arabs is hardly different from the more popular Italian version. The fillings consist of the usual vegetables like carrot, broccoli and zucchini. It is sandwiched between two thick layers of cheese.
Salads, Soups, chicken shawarma, Moroccan hammer roast and staples like Beef Moussaka, Okra Saloona and Arabic desserts like Umm – Ali, Baklava, Jibilya, Mohallabiya and Kiwi Jelly.

How to make ... Karunaikkizhangu masiyal

Kamakshi Sundaram is a homemaker who loves cooking vegetarian dishes from around the world. 
She is the winner of several recipe contests.
My grandma was an excellent cook and used to make unique dishes from traditional recipes. 
Karunaikkizhangu has medicinal value. 
To avoid allergies cook the Karunaikkizhangu in the water used to wash rice.
What you need :
Karunaikkizhangu - 200 gm
Tamarind paste - 1 tsp
Turmeric powder - 1/4 tsp
Salt - to taste
Lemon - 2
Ginger, finely chopped - 2 tbsp
Green chillies, finely chopped - 2 or 3
Oil - 1 tbsp
Mustard - 1/4 tsp
Black gram – 1 tsp
Fried cashewnut – 2 tbsp
Coconut, grated - a little
Coriander – for garnishing

Cooking instructions
Wash, peel, chop the kizhangu in a pressure cooker with a cup of water, turmeric powder and tamarind paste till soft. Mash the cooked kizhangu well.
In a pan heat oil, add mustard and when it splutters add the black gram and cashew nuts. When it turns golden add green chillies and ginger. Sauté.
Add grated coconut, chopped coriander, the mashed kizhangu with salt and little water. Turn off the fire. Cool. Add lemon juice, mix well and serve.

Apple halwa is made with just two basic ingredients:

 apple and oats.

 I learnt this recipe from my grandmother and
 it can be made in a jiffy.

What you need :

Oats: 1/2 cup
Freshly grated apple: 1 cup
Sugar: 1 cup
Ghee: 2 tbsp
Orange food colour (optional): a pinch
Cardamom powder (optional): 2 pods

Cooking instructions:

Heat a kadai and add ghee.
Roast the oats first for a few minutes and then add the grated apple.
Fry for a few more minutes and then add 1/2 cup water.
When the oats are cooked add the sugar.
Boil first and then let simmer. Add the food colour.
Cook till the mass leaves the sides of the pan.
Garnish with ghee-fried cashews and cardamom.

Decoding the Italian cuisine for you

In the movie, Eat, Pray, Love, Julia Roberts may have had help to get her ‘rrrrs’ right while placing her order in the authentic Italian restaurants, but not everyone is as lucky. While most foodies don’t mistake their fusilli with fettuccine, the ones who are new to the cuisine may may find Italian 
terms confusing. A simple example would be the dish Maccheroni al Formaggio, which sounds super fancy on the menu, but translates into the very simple macroni and cheese.




Chef Shamsul Wahid from Smokehouse grill says that the names of the Italian dishes are mostly a combination of the terminologies of the ingredients used in the dish. “For instance, lamb is called Abbacchio in Italian, pork is Maiale and beef is Manzo and so on,” says Wahid.
“Most of the restaurants now carry an explanation of the dish along with the authentic Italian name so that people are aware of what they are eating,” he informs.
Here’s decoding some difficult sounding popular Italian dishes and their constituents:
PastaAntipasto 
Carpaccio is one of the well known dishes, which is served as an appetiser. But unlike most antipasto, this one does not really see much cooking. Carpaccio is just a thinly sliced raw meat or fish. 
“Since raw meat is not that well accepted by the people here, there are variations of it like Watermelon Carpaccio and Orange Carpaccio,” says Chef Thomas Figovc, from The Leela Kempinski.
Primo
Pesto is another well-known term, but many actually don’t know what it means. “Pesto genovese is an ancient recipe which is a mix of basil, parmesan cheese and pine nuts,” says Wahid. It is usually used with pasta. Another popular dish is Piccata, which means to be pounded flat! “The dish is flattened meat spread with egg and parmesan,” says Wahid. 
Dolce
And finally how can one finish a meal without dessert! The famous Panna Cotta may rhyme with terracotta but the Italian desert has nothing to do with clay. It means cooked cream and is made by simmering together cream with vanilla and mixing this with gelatin to let it set.

Add on know-hows while ordering Italian food:  
Antipasto means ‘before the meal’ and includes hot or cold appetisers.
Primo is the first course and consists of a hot dish like pasta, risotto, gnocchi, or soup.
Secondo is the second course and consists of the main dish, usually fish or meat.
Contorno is the side dish, and may be a salad or cooked vegetable.
Formaggio e frutta is cheese and fruits. 
 Dolce is sweet, and includes cakes and cookies.
Caffè is coffee.
