Chef Kapil Dubey of The Westin Gurgaon assembles a delicious mango treat
Mango sago with vanilla cream
Serves 3-4
Ingredients
500ml milk
75g sugar
100g coconut, desiccated
25g butter
1 tsp vanilla essence
K cup mango, diced
150g sago
300ml cream
Method
Soak the sago overnight. Heat the milk, add sugar, butter, coconut and soaked sago seeds. Boil until the milk thickens. Take off the heat and cool the mixture. Now whip the cream for 6-7 minutes until it becomes thick.
Take a martini glass and start layering. First put in the whipped cream, then the sago mix, the mango dices, top with cream and sago and garnish with some mango dices. Spoon some vanilla essence on top of the whipped cream and mango.
