Easy-to-make, delicious and kid-friendly rolls for the lunch box

When hitting the road, don’t forget the kids essentials, such as games, toys and most important — something good to eat! Rolls are perfect for the road and for the lunch box too. 
They’re easy to make and delicious to eat — kid-friendly, if presented nicely. With all veggies and nutrients wrapped in a roll, it makes a filling and balanced meal by itself. 
Chapattis provide energy-giving carbohydrates, while vegetables provide vitamin and fibre. Make a filling of tofu or baby shrimp if you prefer. 
Brimming with vegetables and lots of flavour, rolls make great appetisers at parties. You may also use leftover ingredients and some cooked vegetables with spices for the filling.
Here are some recipes.
Chapatti Roll
Ingredients:
Chapattis: 5
Shredded cabbage: quarter cup
Grated carrot: quarter cup
Grated paneer: quarter cup
Onion, finely chopped: quarter cup
Capsicum, thinly sliced: 1
Green chillies, finely chopped: 2
Ginger, finely chopped: 1 inch
Coriander, finely chopped: a small bunch
Cumin seeds: half teaspoon
Turmeric powder: half teaspoon
Chilli powder: quarter teaspoon
Coriander powder: quarter teaspoon
Garam masala: quarter teaspoon
Dry mango powder: quarter teaspoon
Sweet imli chutney: half teaspoon
Salt: To taste
Oil: For cooking
Method:
Heat oil in a pan and add the cumin seeds and onions. Fry till they become tender, add chopped green chillies and grated ginger. Now add all the veggies, masala powder and salt. Fry for five minutes, cover, then add grated paneer and cook for another 3-5 minutes. Remove the lid and let all the water evaporate. Add the coriander and mix well. Then spread chapattis and spoon imli chutney on each chapatti. Divide the veggie mixture into five equal parts and spread it inside the chapatti. Make a roll and it is ready to eat.
Egg Roll
Ingredients:
Chapattis: 4
Eggs: 4
Onions, finely chopped: 2
Grated carrot, cucumber, tomato, capsicum: 1 cup
Green chillies, finely chopped: 2
Tomato chilli sauce: 2 teaspoons
Pepper powder: 1 teaspoon
Coriander, finely chopped: A bunch
Lemon juice: 1 teaspoon
Salt: To taste
Oil: For cooking
Method:
Beat an egg with some salt, butter, pepper powder and pour it on a hot griddle to make an omelette. Spread it to the size of a chapatti. Now place the chapatti on the omelette, before it is cooked. Turn it over and roast well on both sides till it is properly cooked. Remove from the griddle and place it on a sheet of paper. Sprinkle onions, mixed veggies, green chillies, red chilli powder, and salt on the egg side of the chapatti. Sprinkle coriander and a few drops of lemon juice and sauce. Now, to roll the chapatti, hold it, and then roll the paper with it. The bottom should be covered with paper. The egg roll is ready to serve.
Dosa Roll
Ingredients:
Dosas: 4
Jam: 2 tablespoons
Marmalade: 2 teaspoons
Finely chopped fruits of your choice: half cup
Method:
The dosas should be hot. Spread one teaspoon of jam on each of the four dosas. Divide the fruit mixture into four equal parts. Spoon fruit pieces on the jam and top it with some marmalade. Roll them and delicious dosa rolls are ready.
Bread Roll
Ingredients:
Medium-sized potatoes, boiled: 3
Onion, finely chopped: 1
Green chilli, finely chopped: 1
Cumin powder: half teaspoon
Red chilli powder: half teaspoon
Garam masala: quarter teaspoon
Chaat masala: half teaspoon
Chopped coriander leaves: 2 teaspoons
Bread: 6 slices
Salt: To taste
Oil: For cooking
Method:
First macerate potatoes and then add chopped onions, chopped green chillies, along with salt and masala powders. Mix these properly. Take bread slices and immerse them in salted water and then squeeze the water out completely. Next add the filling and close the roll with the palm, making sure no water is left in the bread. Give it the shape of a roll. Heat oil in a pan and fry rolls till brown and crisp. Serve hot with chutney.
