Jaiywanti Dugal, food director at Azure Hospitality, would have ideally liked to have more of a social life than she enjoys right now. Presently, she is busier than ever. Having launched two new restaurants recently—Rollmaal and Speedy Chow in Gurgaon—Jaiywanti is busy setting things in motion. 

“Even though I have a strong systems and processes team at both places, I like to be physically present for proper functioning and monitoring of the new properties,” she says.

Hailing from a cosmopolitan background of a Sikh and Indonesian family, she is fondly called Janti, who embarked upon her culinary journey 25 years ago. Presently, her responsibilities go beyond being the director and promoter of the products to other spheres of the business, most importantly of being the executive chef.

 “I ran a catering business before becoming a part of Azure Hospitality. I specialise in all kinds of cuisines and that is why I have the confidence to put my hand into anything new,” says Jaiywanti.

While at the new Rollmaal you can expect to find a variety of rolls along with offerings like vada pav, bun samosa, keema pav, Bombay style franky and more, at Speedy Chow, you can try Asian assortments.

 Some of the items on the menu are American Chopsuey, Honey Chilli Rice Chicken, Veg Mongolia, Spicy Abergine Noodles, Spicy Aubergine and more. “Both restaurants excel in serving comfort foods. In a sense, they are also fast food joints that cater to the fast paced professionals of Gurgaon,’’ she says adding, ‘‘The city, I thought, was prime location for such an offering. There is so much happening here and there are tonnes of youngsters looking for good food options all the time. Now they have two new ones to choose from.’’
